General Objective: Transfer of knowledge aimed at improving production and valorization of traditional dairy products.
Specific Objective: Create added value in cheese and other dairy production through cooperation between academia and small dairy producers in the fields of safety, quality improvement, and product standardization.
Results Achieved:
- Increased producer capacities in milk and dairy product safety and quality within the production chain.
- Introduction of standards in cheese production – improved production conditions and preparation for complex future requirements.
- Improved technology while preserving traditional cheese-making methods and introducing new products.
- Establishment of marketing systems for milk and dairy producers – increased product competitiveness.
